PRÉPARATION
Canneberges
- Dans un petit bol, saupoudrer la gélatine sur 30 ml (2 c. à soupe) du jus de canneberge. Laisser gonfler 5 minutes.
- Dans une casserole, porter à ébullition le reste du jus avec les canneberges et le sucre. Couvrir et laisser mijoter 10 minutes. Retirer du feu. Incorporer le mélange de gélatine. Transvider dans un bol et laisser tiédir. Couvrir et réfrigérer 6 heures. Au moment d’utiliser la garniture aux canneberges, mélanger avec une spatule pour lui redonner de la souplesse.
Gâteau
- Entre-temps, placer la grille au centre du four. Préchauffer le four à 180 °C (350 °F). Tapisser une plaque à biscuits de 43 x 30 cm (17 x 12 po) de papier parchemin en le laissant dépasser sur les côtés les plus courts. Beurrer le papier et les côtés non tapissés.
- Dans un bol, mélanger la farine, la poudre à pâte et le sel.
- Dans un autre bol, fouetter les œufs avec le sucre au batteur électrique jusqu’à ce que le mélange triple de volume et forme un ruban en retombant du fouet, soit environ 10 minutes. Tamiser les ingrédients secs au-dessus du bol d’œufs et les incorporer en pliant, à l’aide d’un fouet. Répartir la pâte uniformément dans la plaque.
- Cuire au four 15 minutes ou jusqu’à ce qu’un cure-dents inséré au centre du gâteau en ressorte propre. Laisser refroidir complètement sur une grille, soit environ 1 heure.
Crème chiboust à la vanille
- Dans un petit bol, saupoudrer la gélatine sur l’eau. Laisser gonfler 5 minutes.
- Dans une petite casserole, porter à ébullition le lait, la gousse et les graines de vanille. Retirer du feu, couvrir et laisser infuser 10 minutes.
- Dans une autre casserole hors du feu, mélanger 30 ml (2 c. à soupe) du sucre et la fécule. Ajouter les jaunes d’œufs et bien mélanger au fouet. Incorporer le lait. Porter à ébullition à feu moyen en remuant continuellement et en raclant le fond et les parois de la casserole jusqu’à ce que le mélange épaississe. Passer la crème pâtissière au tamis. Ajouter la gélatine et remuer à l’aide d’un fouet jusqu’à ce qu’elle soit complètement dissoute. Réserver la crème pâtissière dans un grand bol.
- Dans un autre bol, fouetter les blancs d’œufs au batteur électrique jusqu’à ce qu’ils forment des pics mous. Ajouter le reste du sucre graduellement tout en fouettant jusqu’à ce que la meringue forme des pics semi-fermes.
- Ajouter la meringue, un tiers à la fois, dans la crème pâtissière en pliant délicatement à l’aide d’une spatule.
Montage
- Retirer le gâteau de la plaque en le maintenant sur le papier parchemin. Étaler le quart de la crème chiboust sur toute la surface du gâteau. Répartir les trois quarts de la garniture de canneberges sur la crème. Rouler le gâteau à partir du côté le plus court. Déposer sur un plat de service. Couvrir complètement la bûche avec le reste de la crème chiboust. Réfrigérer 2 heures. Réfrigérer le reste des canneberges.
- Au moment de servir, mélanger vigoureusement la garniture aux canneberges et répartir sur la bûche.

PREPARATIONcranberries
In a small bowl, sprinkle gelatin over 30 ml (2 tablespoons) of cranberry juice. Allow to swell for 5 minutes.
In a saucepan, bring the rest of the juice to a boil with cranberries and sugar. Cover and simmer 10 minutes. Remove from fire. Stir in the gelatin mixture. Transfer to a bowl and let cool. Cover and refrigerate 6 hours. When using cranberry filling, mix with a spatula to give it some suppleness.
CakeMeanwhile, place the rack in the center of the oven. Preheat the oven to 180 ° C (350 ° F). Line a 43 x 30 cm (17 x 12 in.) Baking sheet with parchment paper, letting it protrude on the shorter sides. Butter the paper and the non-upholstered sides.
In a bowl, combine flour, baking powder and salt.

Chiboust cream with vanillaIn a small bowl, sprinkle the gelatin over the water. Allow to swell for 5 minutes.
In a small saucepan, bring milk, clove and vanilla seeds to a boil. Remove from heat, cover and let infuse 10 minutes.
In another saucepan off the heat, mix 30 ml (2 tablespoons) sugar and cornstarch. Add the egg yolks and whisk well. Stir in the milk. Bring to a boil over medium heat, stirring constantly and scraping the bottom and sides of the pan until the mixture thickens. Pass the pastry cream through the sieve. Add the gelatin and stir with a whisk until completely dissolved. Reserve the custard in a large bowl.
In another bowl, whisk egg whites with electric mixer until soft peaks form. Add the rest of the sugar gradually while whisking until the meringue forms semi-firm peaks.
Add the meringue, one-third at a time, into the custard by gently folding with a spatula.
MountingRemove the cake from the plate by holding it on the parchment paper. Spread a quarter of the chiboust cream over the entire surface of the cake. Spread three quarters of the cranberry filling over the cream. Roll the cake from the short side. Place on a serving platter. Cover the log completely with the rest of the chiboust cream. Refrigerate 2 hours. Refrigerate the rest of the cranberries.
When ready to serve, mix cranberry filling vigorously and spread over the log.
